Raw and uncooked foods take the spotlight in this restaurant run by William and Marie Pradeleix. Already famous for his first Parisian address, Will, the chef started a new adventure where everything is served cold, uncooked or barely seared. Meat and fish come in tartare, sashimi and tataki forms, and vegetables as carpaccio or soup. This obsession for raw and healthy food finds its origin in the chef's experience in San Francisco.

Whether you happen to love or just have an interest in raw food, the subtle mix of Asian influences and French savoir-faire meets general approval: the Tahiti-style yellowfin tuna tartare or the ricotta mousse with green asparagus and marinated grapefruit in ginger prove it. This raw trend is winning new adepts every day in the French capital. Consequently, a takeaway version, Raw to Go, and a second address in the Saint-Germain-des-Prés neighbourhood have opened, where you can try raw pintxos, as a tribute to William Pradeleix's Basque origins.
